Le Bistró

Some restaurants have an atmosphere that is carefully designed. Others, like Le Bistró in Cumbayá, seem to come alive almost by osmosis. Le Bistró belongs firmly in the second category. Sebastián Borja opened the restaurant just weeks before the pandemic forced him to improvise almost everything. Perhaps that is where its easygoing spirit comes from: it was never conceived as a solemn temple to French cuisine, but as a true bistro, a place where eating well should matter just as much as feeling good. Today, its sixty seats are spread across several spaces—a bar, lounge, pergola and terrace—that allow the restaurant to shift personality without losing its thread.

The aesthetics help, but there is no attempt to disguise Cumbayá as Paris. Warm lighting, wine glasses, greenery, wood, a bar that comes alive before and after the meal, and just enough French references to set the tone without turning the place into a stage set. The result is polished and elegant, but also relaxed and approachable, without making guests feel they need to be on their best behavior: modern, warm, romantic and welcoming all at once. For many, it has become Cumbayá’s place to be where atmosphere and a menu that moves between Old and New Worlds come together in a memorable experience.

Le Bistró is also shaped by the bottles being opened, the cocktails mixed at the bar, the tables that linger in conversation, and a chef who comes out of the kitchen to talk to people. Someone might arrive at 2 p.m. and find only one other table occupied, then half an hour later discover that there is barely a seat left. That transformation—from quiet dining room to restaurant in full swing— explains its charm better than any piece of décor ever could.

The food does the rest. A good bottle gives you a reason to stay, and the menu has the same relaxed spirit. Borja puts it best himself: he avoids culinary fanaticism, respects the codes, but cooks according to how people actually want to eat. That lack of rigidity extends naturally into the dining room.
Recognizing Le Bistró for Best Ambiance means recognizing a restaurant that is not trying to impress you in the first thirty seconds. It achieves something harder: making sure that, two hours later, you still do not really want to leave.
