1. la birrería
La Birrería is beer and burgers in both the classic and the inventive sense. Born in Cumbayá in 2015 as a family project, it has stayed sharp by refusing to stand still: fire, sourdough, kimchi, smoked cheeses, marinades. The ideas keep evolving, but the hierarchy never changes. Burgers still run the place.

Bendito started in 2017 with four tables, Renato González’s sisters waiting on them and his future wife working the till. Today he is a two-time Burger Show champion for signature burgers. The kitchen thrives on motion: house sauces, ferments, Amazonian neapía, even ramen. Proof that there is still a ridiculous amount of room to cook between two buns.

It made a name for itself with pizzas, but their burgers stopped being an afterthought a long time ago. In Tumbaco, they’ve become a hit: a short list, straightforward, meat firmly at the center. The Francesa comes with grilled onions and honey mustard; the Gringa includes bacon; the Italiana, San Marzano tomatoes and basil; the “Segura” (the sure one) keeps things simple, no impossible towers, no excess, just really good burgers.

Blend takes its name literally. Everything starts with a proprietary mix of premium cuts, made fresh every day and never frozen. From there, the menu gets playful: Angus picanha, brie, miso, gochujang, black truffle, black garlic, alongside more classic combinations. Seasonal burgers can even earn a permanent spot by popular vote. The Picanha says it all: signature blend, topped with slices of Angus picanha.

Lucía has been serving American comfort food since 2010, long before smash burgers became a craze. Fresh-ground free-range beef, barbecue, ribs and proper American-style pies make up a menu where the burger was never the only star. In a category constantly chasing the next new thing, Lucía has the advantage of having spent years getting the fundamentals right.
